Fabiola’s Restaurant offers catering for weddings and other events

Once Cornejo’s Restaurant, Narciso and Maria Garcia purchased the restaurant in September 2000. Since Narciso passed away in 2014, Maria continues to own the restaurant, and pops in to visit customers, plus, still works there sometimes. Their daughters, Kristina Garcia and Soffia Hensley, manage the restaurant. Fabiola’s was named for Kristina’s cousin, Fabiola Medina, whose mother owned the restaurant before the Garcias purchased it.

“We have our regular customers that we really appreciate, as well as all others,” Manager Kristina Garcia said.

In 2012, Narciso had the idea for their current Mexican buffet. The all-you-can-eat buffet is served from 11 a.m. to 2 p.m. Monday-Friday, and Tuesday-Thursday, it is also served 5-8 p.m. Lunch buffet price is $8.50, and dinner costs $9.50. On Tuesdays, kids eat free with the purchase of an adult buffet.

Over the years, the restaurant decided to get into the catering business, which has served many weddings, corporate events, the school district, and last year, they served at the local Ladies Night Out event. You can order a taco bar, fajitas bar, crock pot queso, and add enchiladas and other items. Pricing varies for catering. For more information, the link to the catering menu can be found here.

The kitchen staff consists of chefs who have remained there for 10-15 years, giving consistency to the flavor of the food. Including wait staff, Fabiola’s employs 10 people.

Daily drink specials are available Tuesday-Sunday, including glasses of wine for $3 on Wednesdays and half prices margaritas on Thursdays. Daily lunch specials, with a variety of items, often include items not on the menu. Recently, they have expanded their menu. Go check them out! Gift cards are also available, and orders to go can be prepared.

Every year on their business anniversary, they hold a big party, which often includes a mariachi band, and drink and food specials.

The restaurant can be reached at 620-326-6554. Their hours are Mondays, 11 a.m. to 2 p.m., Tuesday-Friday, 11 a.m.-2 p.m. and 5 to 9 p.m., Saturday, 11 a.m. to 9 p.m. and Sunday, 11 a.m. to 3 p.m.
